Today, it's Good Friday. Here in Canada, it's a long weekend. I'm taking today off, but hope to have something for you Saturday morning and maybe later Sunday night. Don't know. Check back. My readership tends to be down on long weekends, so I'm not sure whether I'll go to the mat or not, and the Guy's coming over for a couple nights, so I may be otherwise engaged. We'll see. One at a time...I can only hope that they will remember they heard something somewhere and they will pass on the info like knowledge. That'd suit me fine...as long as women; young, brilliant, sexy women stopped thinking that they have to look like someone on television, in a video, on the movie screen. You just gotta look like YOU!

ReplyDeleteThe muffins, eh? Heh heh. I get my recipes off allrecipes.com when I want to bake, then I morph 'em. You can go get the "To Die For" Blueberry Muffins recipe on there. Instead of using all white flour, substitute it with 2/3s whole wheat, and 1/3 unbleached. Add to the recipe a 1/2 cup of quick oats that have sat in 1/2 cup of your fave berry yogurt (I use non-fat fieldberry) for at least five minutes. Don't adjust the milk quantity, but increase the baking powder by 50% and reduce the sugar by 20%.
Throw in a teaspoon of cinnamon, and away you go. :)
I usually find muffin recipes too cake-like or too health-nazi, so I try to find the middle ground, and have no fear morphing a baking recipe since I learned the "science" of baking from a brilliant home ec teacher in grade 10. :)
Anyhow, thanks for your comments. Every time, you leave me all happy and blushy. The Guy and I were talking about you over our funky Easter scrambled egg breakfast this morning and he said, "She's really cool." Heh. I concurred, of course.
Here's a recipe for you that I had written out already for someone else, Peanut Butter-Chocolate Chip-Banana Muffins. (Very faint peanut butter taste behind-the-scenes, but it makes it good fat instead of bad fat. Yummy. And you'll find this recipe NOWHERE but here, since it's mostly my creation. :) Enjoy!
So, preheat yer oven to 350.
1/3 c. butter
2/3 c. peanut butter (or almond for healthier...! I use crunchy pb with no preservatives, etc, so I add a little extra salt)
1 cup white sugar
1 egg
3 ripe bananas
1 tablespoon instant coffee granules, dissolved in 1 tablespoon water (pfft... I used the dredges of coffee from my french press -- about 2tbsps. snobs rule. ;)
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour (i use 3/4 c. unbleached with 1.5 cups of whole wheat flour)
1 teaspoon salt
2 teaspoons baking powder
2 teaspoons baking soda
1 - 250-300 grams bag of semisweet chocolate chips
Cream together the: butter, peanut butter, sugar, egg, bananas, coffee, and vanilla. Get it really moist and smooth.
Mix the dry ingredients in a separate bowl, then mix into the creamed mixture by hand. Stir SEVENTEEN times... a trick I learned in home ec 10 -- keeps the muffins as moist and tender as they can be, as they get overly glutinous too quickly. Biggest mistake made. :)
Right at the end, just as the flour is almost all added, like on the 15th stir, mix in the choc. chips and maybe give an extra couple stirs.
Makes 18 yummy muffins. I fill them to the tops of the muffin tins, since the whole wheat is heavier and they don't rise as much.
(I'm keeping the Guy quite well-fed these days, you see. Quite fun cooking for a man who enjoys it for a change. )

LOL! Hey, I've LOST weight baking! Buying that commercial shit is death, but baking at home and having restraint is awesome. Take some to work or share with friends. I never make anything and keep the whole batch... I give half away, every single time, as much as it kills me. :)
ReplyDeleteThe blueberry muffins are better, since it's non-saturated fat, but if you use the almond butter in the banana ones, then you're rocking, since it's the healthiest thing you can eat, according to most health nuts.
And hey, I'm not changign your do-nothing-but-what-you-want day... I've just incited you to WANT muffins, so you're still keeping to your plan. ;)

ReplyDeleteIf walking around on crutches wasn't the ultimate full-body aerobic workout, I'd be putting on some serious weight with what Steff's been feeding me. No joke. I've been on a low-fat, low-carb cooking binge for the last four months or so, except that I haven't been able to actually stand around in the kitchen and cook anything lately.
(Mmmm. Muffins.)
So my role at the moment is to pay for takeout. I can do that. Looks like we're going to try to go out (shock, horror) next weekend and sit down in a real restaurant for the first time since...since the first date, actually. Knock wood.
(Not a couples' blog. Seriously. Swear to Bob. Just pokin' my head in.)
Yeah, but at least I don't serve you lunch. Decadent breakfast, decadent dinner, no lunch. And there's always some sort of mid-day workout. :P
